There is a great back story to this wonderful flour. Generations of Grassi family farmers of producing heritage local wheat varieties and then seeds hidden under the floorboards of a barn during WWII, discovered 40 years later... The flour itself is an Italian masterpiece. Produces sourdough breads with exceptional flavor and lightness. You will often find Miracolo sold out but don't give up - keep coming back!
