Primo Sale (first or young salt) is a young sheep’s milk cheese traditionally made in Sicily. During the production process, the cheese is aged in small baskets for 30 days, giving the wheels their trademark pattern. Primo sale has a bright and fresh aroma and is bursting with a sweet milky flavor. Here, spicy peppercorns are folded into the curds for an added kick of flavor and color. It’s the perfect table cheese to snack on.
