This is a very good cheese. It has the flavor of parmesan without the salt and is much softer, less dry. It is nutty, slightly funky, and makes for a nice white sauce. Fantastic Cacio e pepe or if you are into non traditional Italian the best freaking Alfredo sauce. I mixed cream cheese, parm, and a bunch of this cheese and and salt and pepper onion powder and garlic powder and melted it all together with a half a cup of moo juice. It wasn’t Italian but it knocked the socks off the family.

This product was a disappointment. It was very dry and much too salty. I have eaten it in Tuscany where it is made and it doesn't taste like this.
